• Coffee: 12g
• Grind: from 30 to 34 Comandante • Water: 200g
• Temperature: 92° C
• Water minerality: 90-110ppm
1 Pour 50g of water in a spiral for 7 seconds.
2 To 30 seconds: Pour 100g of water in a spiral for 10 seconds.
3 At 1m 20 seconds: Pour in a spiral for 7 seconds.
4 Total infusion time: between 2 min 40 and 3 min.

Champion of France brewer 2021 & Quality Manager and barista at Terres de Café
• Coffee: 15g
• Grind: from 25 to 31 Comandante • Water: 240g
• Temperature: 93°
• Water minerality: 90-110ppm
1 Pour 60g of water gently, in a spiral, to saturate the coffee bed.
2 At 45 seconds: Pour in a spiral in 5 seconds (high flow) until 120g is reached.
3 At 1 min 15 seconds: «center pour»,
pour directly in the middle, without stirring, to a height 6-8 cm high, until 180g is reached.
4 At 1 min 45 seconds: Pour again in a spiral spiral, more gently, in 7 seconds, until 240g

This kit was developed in Copenhagen by Patrik Rolf and produced by the Belgian brand SERAX. It took two years of product development for Patrick Rolf to clinch the title of Vice Champion at the 2019 World Brewers Cup, thanks in part to this method.
