Grind: The extraction rate is slower because the filter is quite thick, so I choose a coarser grind to ensure a nice intensity in the cup and to give it a juicy character.

I begin with a pre-infusion. I saturate my grind with 40 g of water for 40 seconds (to prepare my coffee bed for a homogeneous brew).
I then add 60 g of water every 40 seconds with dynamic circular pouring to agitate my coffee and create turbulence. This technique ensures a smooth and uniform brew. Brewing takes 4 minutes.
(This extraction time also gives a sweeter, smoother cup).
