ORIGAMI AND CULTURE COFFEE IN JAPAN
The tradition of filter coffees in Japan dates back to the beginning of the 20th century. Today, you can fully discover this experience in the
traditional coffee bars: the Kissaten.
If you are interested in this subject, I invite you to read the sublime
«MY COFFEE LIFE IN JAPAN» by Merry White.
In addition to having a vibrant coffee shop and roasting scene, Tokyo offers a
rich variety of coffee festivals, held almost monthly. The atmosphere is very friendly:
Japanese roasters simply present their coffees on a table. There is no milk or sugar here - only the search for taste and the discovery of the art(isanat) of roasting.
It was at one of these festivals that I met Suzuki san, creator of the TRUNK roastery in Nagoya, who served his wonderful coffees made with the Origami
dripper.
While looking for a job as a barista, I realised that this job is very serious here and that there are a lot of codes to integrate, especially in the
reception and the customer experience.
Suzuki san was the first to offer me a job in its coffee shop in Nagoya,
a city 1.5 hours from Tokyo by train. The offer was very interesting but I had come to discover Tokyo and I wanted to stay there to enjoy
its cultural life. I decline the offer while being very grateful for Suzuki san’s proposal.
