    LE NEZ DU CAFÉ©
A sensory alphabet made in France.
The aromas of coffee tell us about its geographical origin and its production process. They tell us about the art of the roaster. The Nose of Coffee consists of a collection
of aromas to smell and a book to learn how to taste. It represents an olfactory alphabet that offers a universal language to talk about a fruit of the earth: coffee.
A wine tool adapted for coffee.
The Coffee Nose project was born during a professional trip to Colombia in May 1996. After discovering the Nez du Vin, created by Jean Lenoir, the leaders of the Federación National de Cafeteros de Colombia (FNCC) were immediately convinced of the need to participate in the implementation of a similar tool to translate the gustatory and olfactory realities of coffee.
Jean Lenoir then surrounded himself with two specialists, passionate about the expression of aromas in tasting: a biochemical engineer, David Guermonprez, and a taster, Éric Verdier. Together, they studied the most characteristic odorant compounds of the world’s different coffees in order to sculpt one by one the 36 aromatic notes that constitute Le Nez du Café®.
Each proposed aroma is the result of a long analysis, a selection of compounds and a subtle dosage.
After more than a year of work, the launch of the Nez du Café® took place in Colombia in October 1997, for the FNCC’s 70th anniversary. The box is now published in four languages (French, Spanish, English and German).
The fruit of French craftsmanship.
The collections are made in Cassis, according to the tradition of the art crafts. Great attention is paid to the quality of each of the components and the stages of manufacture of the boxes. Jean Lenoir relies on the know-how of talented craftsmen to work on this Made in France object.

Whether it is the aromatic raw materials from Grasse, the cardboard boxes from the Drôme or the printer in Rennes, French know-how is valued. Only the glassware is blown in Italy.
The realism of the aromatic raw materials, which come from Grasse, is striking, and their longevity is guaranteed for over five years.
