 Syphon

The most impressive way to make coffee, popular with large audiences because of the visible flame or red halogen lamp.
The syphon is created from two glass globes, connected by a filter. The water is pushed upwards into the hopper by the heat and reaches a semi-gaseous state, at which point the coffee is added. The infusion is stopped by turning off the heat, and the coffee filters back down to the lack of pressure. It produces an extremely smooth cup!

Spirits Champion – independent, Paris
• Coffee: 32 g
• Grind: French press, or very slightly finer • Water: 400 g, then 100 g chilled water
• Water minerality: 90-110ppm
1 Pour 400 g of water into the lower bowl and heat over a halogen or gas burner.
2 Place the tulip on top with the filter and press down to ensure a tight seal.
3 When the water has risen, pour in all the coffee and stir briefly.
4 After 3 min. 30 seconds, pour in the chilled water and turn off the heat.
5 Stir the coffee in the form of a circle until it sinks.
6 Gently remove the tulip and serve!
The cold water bypass stops the brewing, thus preserving the fruity and floral notes.
